SPAGHETTI SQUASH, ARRABIATA SAUCE

INGREDIENTS
1 Spaghetti squash, halved
3 Tbsp Olive oil
4 Garlic cloves, minced
1/2 tsp Ground pepper
To taste Salt
796 ml Canned crushed tomatoes
To taste Grated Parmesan garnish
PREPARATION

Preheat oven to 180°C (350°F).

For the squash: Place the squash halves in a baking dish, cut side down.

For the sauce: Heat olive oil over medium heat, add the minced garlic, without browning it, then add the pepper, stirring for a few minutes. Add the tomatoes and let simmer for 20 minutes until thickened. Season to taste.

BAKING

Bake the squash for 30-40 minutes until tender, then remove the seeds, and separate the squash pulp with a fork to make spaghetti.

Spoon sauce over squash and sprinkle with Parmesan.
