AMBERCUP SQUASH AMBERCUP SOUP WITH APPLE Portions: 4-6 Preparation time: 15 min Cooking time: 20 min INGREDIENTS 1 Ambercup squash, cut in chunks 1 Onion, chopped 3 Tspn Olive oil 2 Carrots, cut in chunks 3 Garlic cloves, crushed 3 Apples, cut in chunks 2 Potatoes, cut in chunks 5 cups Boiling water To taste Salt and pepper Fresh thyme sprigs PREPARATION In a large saucepan, heat 2 Tbsp of olive oil over medium heat. Sauté all the ingredients for 5 minutes, except for the water and the sliced apples. COOKING Pour in the boiling water and simmer for 20 minutes, or until the vegetables are softened. Remove the thyme sprigs before puréeing the ingredients in a food processor. Season to taste.
