Preheat oven to 400°F. Set aside a large, non-stick baking sheet.
Peel the squash and cut into long, large slices. Place in a large bowl, add the olive oil and mix well with a wooden spoon to completely coat the fries. Add the curry powder, as well as the dried oregano. Generously season with salt and pepper and mix again to coat well.
Place the slices side-by-side on the non-stick baking sheet so they don’t touch.
