BUTTERKIN SQUASH
BUTTERKIN SQUASH PURÉE

INGREDIENTS
1 Onion, chopped
2 Garlic cloves, minced
3 Tbsp Butter
6 cups Butterkin squash, cut in cubes
1 cup Chicken broth
To taste Salt and pepper
PREPARATION

Chop onion and garlic.

Cut the squash into cubes.

COOKING

In a saucepan, soften the onion and garlic in the butter. Add the squash and continue cooking over low heat about 5 minutes, or until the squash begins to brown. Add the broth. Cover and let simmer for about 20 minutes, or until the squash is tender.

In a food processor, reduce the squash to a smooth purée. Season. Keep warm.
