GREEN CABBAGES
CREAM OF CABBAGE SOUP

INGREDIENTS
1 Onion, thinly sliced
2 Tbsp Butter
8 cups Shredded green cabbage
5 cups Chicken broth
1 Potato, cubed
2 Bay leaves
1/2 cup 35% or 15% cooking cream
To taste Salt and pepper
PREPARATION

In a large casserole, soften the onion in the butter. Add the cabbage, broth, potato, bay leaves and bring to a boil. Cover and let simmer for about 30 minutes, or until the vegetables are tender. Remove the bay leaves.

In a blender, reduce the soup to a smooth purée and add the cream. Season to taste.
