STRIPETTI SQUASH
SQUASH WITH HONEY & CORIANDER

INGREDIENTS
1 Stripetti squash
1 Butternut squash
2 Acorn squash
3 Tbsp Butter
3 Tbsp Honey
2 tsp Coriander seeds, crushed
2 Tbsp Shelled pumpkin seeds
2 Tbsp Fresh coriander leaves, chopped
To taste Salt and pepper
PREPARATION

Place rack in centre of oven. Preheat oven to 200°C (400°F).

Cut the squash into cubes and set aside on a large baking sheet.

In a small casserole, melt the butter and the honey with the coriander seeds.

Brush the squash with the butter mixture. Season to taste.

BAKING

Bake in the oven for about 45 minutes. Remove the baking sheet from the oven and sprinkle pumpkin seeds over the squash.

Set the oven to broil. Continue to cook the squash until golden. Sprinkle with fresh coriander.
